Cooking with Provençal Herbs: A Little Sunshine in Your Kitchen
Before you reach for the saucepan, take a moment with the herbs. Rub a little rosemary between your fingers. Smell a sprig of thyme. Notice how different they are, even though we so often think of them together.
For me, these scents are part of the pleasure of Provençal cooking. They invite you to pay attention before the first bite, and remind you how much a simple ingredient can bring to a dish.
Start with something simple
You don’t need an elaborate menu to explore Provençal herbs. Start with vegetables you already enjoy cooking: tomatoes, zucchini, or eggplant. Choose one herb, add a little, and notice what it brings.
Rosemary has a strong presence, so begin sparingly. Thyme offers another direction. Try them separately before combining them; it’s a lovely way to become more familiar with your own preferences.
There is no need to make every dish taste the same. The pleasure is in discovering what works for you.
Let the herbs inspire the menu
On the previous French Moods website, our herb-inspired cooking gatherings included ratatouille, a savory tomato tarte Tatin, stuffed eggplant, and sage meatballs. The herbs gave us a starting point, with plenty of room to explore different ingredients and textures.
You can take the same approach at home. Pick an herb, choose a seasonal ingredient, and see where the combination leads.
Make it a small discovery to share
Put two or three fresh herbs on the table and invite someone to smell them with you. What comes to mind? A garden? A dish? A place?
There are no right answers. Sometimes a little conversation about an ingredient is enough to make cooking feel more interesting.
